Cuisine 6 September 2018

There is much to like at Lillius. The setting is exquisitely sophisticated, a mix of hard and soft surfaces, elegant in its spareness and simplicity. The gorgeous royal blue booths and banquettes with contrasting mustard chairs are both comfortable and striking. The simple arch through to the open bar and kitchen highlights the graphic form of the dried flowers. Lighting is subtle and warming.

Lillius is in a curious location perched at the top of Khyber Pass Road. There is little in the way of foot traffic, and definitely no parking outside. Which is fine for Zoomy and Uber users, but a little awkward for drivers. So clearly, like The French Cafe around the corner, it’s aiming to be destination dining.

First Look: Lillius

The well-connected owners of new uptown fine-diner Lillius, Fraser McCarthy and Shannon Vandy, have some serious hospitality miles under their belts. The now-couple first met while working under Ben Bayly and Michael Dearth at The Grove – Vandy an AUT culinary arts intern at the time, on larder, and McCarthy on veg prep.
In 2011, after two years under Bayly, Vandy moved to Merediths on Dominion Road and McCarthy to TriBeCa under Hayden McMillan. Each spent about a year in their respective workplaces before Bayly, by now a friend and mentor, hooked them up with jobs in Chamonix – one of the great cheese-regions in France – working as private chalet chefs. Three years working Europe’s summer and winter, and traveling during spring and autumn, ignited a great appreciation of uncomplicated food in the pair, who returned to Auckland in 2014 to work at Baduzzi and Merediths respectively.

Restaurant review: Lillius, Grafton

It's a tough life giving a damn about what words mean. I know that most people regard as obsessive-compulsive those who care when a writer uses "miasma" when he means "maelstrom" or "refute" when she means "deny".

So when I decided to try out Lillius, a new restaurant at the top of Khyber Pass, I was curious about the name. It looked Latin, but my Latin dictionary (yes, I do have one; what's wrong with that?) has no entry for it.

I emailed for an explanation the day after we had eaten there and co-owner Shannon Vandy replied — and I paraphrase her here — that it comes from "lily" which comes from Latin "lilium". That's sort of correct, though how you can derive a Latin word from a word derived from Latin is an etymological puzzle so contorted as to verge on existential.
